Korean Vegetarian Dumplings: Yachae Mandoo


Yachae Mandoo is a harmony of between tofu, eggs, glass noodles and vegetables. You can opt for any type of veggies you want and choose to cook the dumplings in different ways. Either boiled or steamed; deep-fried or pan-fried, or even added to a soup, the vegetarian mandoo is still delicious.

  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 1 cup of Napa cabbage (half of one head), finely chopped
  • 1 cup of tofu (2 blocks), chopped
  • ¼ cup of bean sprouts, blanched and chopped
  • 115 grams of mung bean or sweet potato noodles, soaked and chopped
  • 3 cloves of garlic, finely chopped
  • 1 tbsp sesame oil
  • 3 tbsp soy sauce
  • 2 tsp salt
  • 1 tsp pepper
  • 1 package of dumpling wrappers

Steps to Make It

In a big mixing bowl, add the beaten egg, onion, cabbage, bean sprouts, tofu, chopped noodles and combine them well.

In a separate bowl, mix the garlic, sesame oil, soy sauce, salt and pepper together. This is the seasoning mixture.

Pour the seasoning mixture over the tofu and veggies combination. Mix thoroughly.

Take one piece of dumpling wrapper in your palm. Place 1 tablespoon of stuffing in the centre of the wrapper.

Dip your fingertip to water and wet the edges of the wrapper. Fold the wrapper in half then crimp the edges.

Repeat the same steps with the remaining filling and wrappers.

Cook the dumplings the way you desire: steam, boil, fry, or sauté.


If you wish to prepare the dumplings in a large quantity for future use, steam them, then wait for them to cool, and put them in the freezer to freeze.

When you want to eat, use them straight from the freezer. Fry, sauté, steam or add them in the soup without defrosting.
