Dumplings Recipe Series: Lamb Dumplings
Meat stuffing for dumplings can be made of a wide range of meats. Aside from pork and beef, lamp is a great choice. Let’s learn to make lamb dumplings for your family meal!
- Ground lamb leg: 500 grams
- Shaoxing wine: 4 tablespoons
- Light soy sauce: 4 tablespoons
- Dark soy sauce: 1 tablespoon
- Peanut oil (or other vegetable oils): 2 tablespoons
- Minced ginger: 10 grams
- Sichuan peppercorn powder: 1/4 teaspoon
- Salt: 1/4 teaspoon
- Zucchini: 80 grams
- Carrot: 200 grams
- Chopped green onion: 80 grams
- Dumplings wrappers: 80 pieces
To prepare the lamb filling
Take a large bowl and add ground lamb meat, Shaoxing wine, light soy sauce, and dark soy sauce to combine. Stir until the mixture gets together to a sticky paste. Add ginger and an even amount of Sichuan peppercorn powder and salt. Continue to mix thoroughly. Add peanut oil and stir well. Use plastic wrapper to cover the bowl and set aside. You can refrigerate it if you are not going to make the dumplings within one hour.
This step is optional. If you decide to make homemade wrappers, mix the ground lamp filling with the seasonings only then set aside or send to the fridge (for up to a day). Do not combine the meat with any vegetables at this point. The salt will make the veggies dehydrated, making the mixture of filling become watery.
Just prepare the veggies right before you decide to wrap the dumplings. You can use a mandoline to slice the carrot and zucchini into strips first, then chop them into small bits. Alternatively, if you have a food processor, use it to mince them.
You need to cook the carrot. Get a nonstick skillet or a wok, add 1 tablespoon oil and heat over medium-high temperature until warm. Add carrot, stir, and saute and cook they get tender, for about 2 to 3 minutes. Get the mixture off the heat and transfer to a plate.
When you are ready for wrapping the dumplings, mix the green onion, zucchini, and carrot with the ground lamb. Combine the well.
To serve dumplings
Serve them with the dipping sauce mixed by these ways:
- Option 1: Combine Chinese black vinegar with a few ginger slices.
- Option 2: Combine Chinese black vinegar with a few drops of fresh Chili oil.
