Ingredients

  • Vegetable broth/chicken-style vegetarian broth: 4 cups
  • Ginger: 2 pieces chopped to 1-inch
  • A pinch of sugar
  • Rice vinegar: 1/3 cup
  • Soy sauce: 1/4 cup
  • Vegetarian mushroom sauce: 2 tablespoons
  • Chili paste: 1/2 teaspoon
  • Minced fresh ginger: 1/2 tablespoon
  • Garlic (minced): 2 cloves
  • Peanut oil: 1 tablespoon
  • Sesame oil: 2 tablespoons
  • Chinese broccoli (chopped): 1 pound
  • Salt and pepper
  • Udon noodles: 1/2 pound
  • Green onions (sliced thin)
  • Cilantro (chopped): 1/4 cup
  • Roasted and salted peanuts (lightly crushed): 1/2 cup

How to make it

Step 1: Prepare the broth

In a large pot, add the vegetarian “chicken” broth, ginger pieces, a pinch of sugar, rice vinegar, soy sauce, vegetarian oyster sauce and chili paste. Stir well to combine.

Boil this broth mixture. Then, cover the pot with a lid and reduce the heat to simmer. Continue to simmer for at least 10 minutes. You can cook it longer as you prefer.

Remove the ginger and season the broth with salt and pepper.

Step 2: Prepare the topping

Heat peanut oil in a large skillet, add the minced ginger and garlic, stir them for 2-3 minutes.

Add the chopped broccoli and sesame oil and sautee until the broccoli gets tender. It may take a few minutes.

Remove the mixture from heat and set aside.

Step 3: Serve the noodles

For an individual serving, place a portion of noodles in a bowl, pour the broth, add the broccoli and top off with green onions, fresh cilantro, and toasted peanuts.

Tips:
